Raasay – While We Wait is a blend of two single malts (from the same unnamed distillery), one peated and one un-peated. The resulting blend is then finished in Tuscan wine casks. Raasay Distillery is opening in 2017 and is situated on the small island between the Isle of Skye and the mainland of Scotland. The aim is that “While We Wait” will give us an indication of what to expect from this new Distillery.

Appearance: Pink Glimmer like a rosé wine.
Aroma: Think peated rosé wine. Lots of fruity notes here and quite heavy on the strawberries and raspberries. There is some vanilla and marzipan hiding away here, but it’s very subtle.
Taste: Fruity notes on the palette, with more strawberries and raspberries before the peat kicks in. The peat doesn’t overwhelm the mouth, but it does sit on the tongue leaving you with a nice long woody and peaty finish.
Mouthfeel: Dry, peaty with fruity kicks.
Overall: An interesting dram but I can’t help be feel this would have been much better without the peat. The fruity flavours don’t really have enough time to express themselves behind the peat. This does show promise and can’t we wait for Raasay to start producing their own single malts.
