One of my first whisky loves was the Flora and Fauna range. It highlighted the diversity that was available in whisky flavours and was incredibly well priced (at the time). It showed off a range of distilleries that didn’t often produce single malt and allowed me to try some great distillate without fuss, marketing or cask finish. One of my favourites was a Mortlach and between then and now, I haven’t had a lot of chance to try any more.

Aroma: Marshmallow sweetness, sour cherry fruit and sticky dates. It is sweet with a brown sugar note that reminds me of stick toffee pudding.

Taste: At the start, this whisky is sugary sweet, like marshmallow or candy floss. It is all about the pear drop sweets, fruity, but in a synthetic way.

In the middle, it has a red wine like tannin quality. Dry, fruity and somehow vegetal. There is a mushroom wellington like quality – buttery and full of umami.

The finish of this whisky is all about a black pepper spice – robust, full of heat and fruity.

Real Dram Factor: Mushrooms and candy floss is an odd combination, but it works – 8.6
